The Bayou XO Mardi Gras rum is double matured. First in bourbon barrels for up to 5 years and then finished for 1 extra year in Spanish Pedro Ximenez sherry barrels. It is proofed down and bottled at 40% ABV. Let's give it a go!
Rich and roasty, full of cocoa, espresso, cola, honey, and molasses. Sweet, but natural.
Thin to medium mouthfeel. Pleasant, full of cola, baking spice, honey, clove, nutmeg, ginger, caramel and espresso. Dark profile, plenty of richness on the back palate. Natural and complex as time progresses.
Long finish. Roasty caramel, espresso, more molasses and bunches of baking spice.
Pleasant overall, this isn't the most complex rum you'll tangle with, but it's well composed and easy drinking, without a sign of dosage or additives. Delicious.
